Find some burdock leaves and leaf stems (stalks) of the first year burdock plant (it will not have a main stem growing upwards). Harvest only the leaf stalks.
Chop into 1" pieces (2.5cm). Steam them for 30 minutes. Cooking them removes the bitterness and the stringiness.
Serve with chickpea gravy.
