>> 3 cups lamb's quarter leaves and seeds
>> 3 garlic cloves
>> 1 onion
>> 2 ripe avocados
>> 1/2 cup toasted nuts or seeds
>> 1/4 cup olive oil
>> 8 to 16 manzanilla olives (or seedless olives of your choice)
>> 3/4 cup chickpeas
>> Seasonings to taste
Place the lamb's quarter, garlic and onion in a food processor; process until well blended.
Add the remaining ingredients and process until desired a spread consistency is reached.
If desired, add seasonings to taste. Use as a spread to make a healthy sandwich, on pita chips, or on any healthy-choice of crackers.
Makes about 2 cups.
