>> 1 cup of cooked and diced chicken mushrooms
>> 1 ripe avocado, sliced
>> 1/2 cup of cherry tomatoes, halved
>> 2 hard-boiled eggs, chopped
>> 1/2 cup of crumbled bacon (optional)
>> 1/4 cup of crumbled feta
>> 1/4 cup of sliced red onions
>> Juice from one lemon
>> 1/8 cup olive oil
>> salt and pepper to taste (for the dressing)
Chop the fresh greens and place in a large salad bowl.
Place the avocado, cherry tomatoes, hard-boiled eggs, crumbled bacon, feta, and red onions on top of the greens.
In a small bowl pour the lemon juice and olive oil. Add a little salt and pepper to taste.
Place the cooled chicken of the woods into the salad and pour the dressing onto the salad. Toss gently to combine all the ingredients.
