>> 4 cups lamb's quarters (leaves and stems)
>> 3 tbsp miso
>> 2 garlic cloves, minced
>> 3 green onions, chopped
>> 1 tbsp sesame oil
>> 1 tbsp olive oil
>> 2 tbsp toasted sesame seeds
>> 1 tsp pepper flakes
Remove lamb's quarter leaves from the thicker stems. If using thin stems, be sure they are cut into 1 or 2" lengths.
Put water in a medium pot. Bring to a boil, then add lamb's quarters. Blanch for about 2 minutes, or until the leaves are tender.
Strain and rinse in cold water two or three times. Strain and squeeze out any excess water.
Place them into a mixing bowl.
In another bowl, mix all the rest of the ingredients. Put the mixture into the lamb's quarter bowl. Either wearing latex gloves, or wash your hands, mix all the leaves until they are well coated with the mixture.
Sprinkle with sesame seeds and serve.
Note: This is a great side to make ahead and serve later.
