>> 1 cup elderberries
>> 1 cup barberries (see notes below)
>> 1 cup strong black tea
>> 1/4 cup rum
>> 1 egg, beaten
>> 1 small apple, peeled, finely chopped or grated
>> 1/2 cup brown sugar (not packed)
>> 2 cups unbleached flour
>> 3 tsp baking powder
>> 1 tsp ground cloves
>> 1 tsp powdered ginger
>> 1/2 tsp nutmeg
>> 1/2 tsp salt
Place the fruit in a medium size bowl. Pour in the tea and rum, stir, and let sit overnight.
Once soaked in the liquid minimum 8 hours, heat oven to 350 degrees F.
Grease a loaf pan.
Slowly add all the ingredients into the berry mixture using a silicon spatula. Keep mixing until thoroughly blended.
Place the dough into the greased loaf pan. Place in oven and bake 45 to 50 minutes. Check for doneness, and if needed, bake another 10 minutes.
Cool in the pan and once cool enough, turn out onto a wire rack.
Once slightly warm, cut and serve. Best enjoyed when thinly sliced.
Notes:
- I used dehydrated barberries which plump out when infused.
- Not enough of one of the berries? Use any combined amount for the berries as long as you have 2 cups total.
