>> 7 large egg yolks (see notes below)
>> 1 1/4 cups sweetened condensed milk
>> 1 1/2 cups unsweetened coconut milk
>> 1/2 cup lime juice (fresh works best)
>> 1 tbsp lime zest
>> 1/2 cup fresh or frozen elderberries
Heat oven to 350 degrees F.
If desired, you can prepare a homemade graham cracker pie crust. For simplicity I used a store-bought graham pie crust.
Combine all ingredients (except the berries) in a medium bowl. Whisk until thoroughly blended. Fold in the berries.
Pour into the prepared pie shell. Slightly tap the pie to remove any possible air bubbles.
Bake 40 minutes or until set. Let cool.
Refrigerate minimum three hours before serving.
If desired, top the pie with whipped cream when serving.
