>> 4 cups elderflower cordial
>> 1 1/2 cups pineapple sauce
>> Freezie tubes
In a bowl, combine the cordial and pineapple sauce. Stir.
Once you have a freezie tube open and the funnel is in, stir the mixture before pouring. Do not overfill the tubes, leave about a ½ inch from the top. Seal the tube. Lay it flat on a baking sheet. This is important so that the pineapple pulp is evenly distributed.
If you overfill a tube, be sure to seal it up, then rinse with water. Make sure the tube is dry before laying it on the baking sheet.
When completed, place the baking sheet in the freezer.
Once frozen, enjoy!
Notes:
To make pineapple sauce, take the fruit of a fresh pineapple and place in a blender. This works really well for over ripe pineapples. Make lots and store in a container. Use leftovers as you would applesauce.
