
>> 2 medium onions
>> 12 cloves of garlic
>> 2 jalapeno peppers
>> 1/2 cup ginger root, finely chopped
>> 1/2 cup horseradish root, finely chopped
>> 3 turmeric roots
>> 1 red cayenne pepper
>> A sprig of dried rosemary leaves
>> Dried elderberries
>> Dried turkey tail mushrooms (if available)
>> Chaga (if available)
>> Organic apple cider vinegar
>> Raw, local honey
Before chopping anything, be sure to wear gloves. It is important to protect your hands from the red cayenne, jalapenos, and horseradish root.
If using a used, (clean), store-bought vinegar bottle, be sure to ensure that all your ingredients are finely chopped. They will expand in size and this will ensure they come out of the bottle when it is time to strain.
Pour vinegar into a large glass jar. Place all finely chopped ingredients into a large used vinegar or other bottle. If the lid is metal, use a piece of parchment paper under the lid to keep the vinegar from touching the metal.
Shake well. Store in a dark, cool place for a month (or two) and remember to shake daily.
After 1 or 2 months, use cheesecloth to strain out the pulp, pouring the vinegar into a clean jar. Be sure to squeeze as much of the ingredients as you can from the pulp while straining.
Take as much of the infused vinegar as desired and put in as much honey as desired. Stir until incorporated. Taste your elixir and add more honey until you reach the desired sweetness.
