
>> 1/4 cup shortening
>> 1/4 cup molasses
>> 1/8 cup brown sugar
>> 1/8 cup lukewarm water
>> 1 cup unbleached flour
>> 1/4 cup pine flour
>> 1/2 tsp baking soda
>> pinch of sea salt
>> 1 tsp ginger
>> 1 tsp allspice
>> 1 tsp cloves
>> 1/2 tsp nutmeg
>> 1/8 tsp anise
Cream the shortening, sugar and molasses. Blend in the water, then the dry ingredients. If needed, add more water one teaspoon at a time to get a moist consistency. Cover, chill 2 hours.
Heat oven to 375 degrees F. On a large piece of parchment paper, roll the dough to between 1/8 to 1/4" thick. (I fold the parchment paper over the dough, then roll.) Cut the dough with your favorite cookie cutters. Place cookies on a baking sheet covered with parchment paper.
Place in the oven and bake 10 to 12 minutes. The smaller the cookie, the less time needed to bake.
Let cool then remove from baking sheet.
If desired, ice them - or enjoy as is!
