
>> 1 1/4 cup unbleached flour
>> 1/4 cup lamb's quarter powder/flour (see note below)
>> 1 1/2 tsp baking powder
>> 3/4 tsp sea salt
>> 2 tbsp olive oil
>> 1/2 cup lukewarm water (plus 2 tbsp)
Sift together the dry ingredients. Add the oil to the water. Using a spatula, blend as best as you can.
Using your hands, keep mixing the dough and knead it for about 5 minutes. Let sit for 10 minutes. Preheat oven to 425 degrees F.
Cut two equal pieces of parchment paper to use for rolling out the dough. Cut the dough in quarters. Take one quarter and place it on one piece of parchment paper; cover with the second piece. Roll the dough as thin as you can; as you roll, create a round shape.
Repeat the process with the remaining dough.
Use the parchment paper and cover a baking sheet. Place rolled dough onto the baking sheet.
Bake for approximately 8 minutes, flip them and bake 2 more minutes.
Enjoy warm!
Note: I used a combination of lamb's quarter leaves and seeds when making the flour.
