
>> Dough:
>> 1 1/2 cups unbleached flour
>> 1 cup coconut flour
>> 1/8 cup coconut sugar
>> 1/4 tsp baking soda
>> pinch of salt
>> 1/2 cup shortening
>> 2 large eggs
>> 1 tsp vanilla
>> 1 1/4 cup water
>> Filling:
>> 3/4 cup chopped Saskatoon berries
>> 1 1/4 cup chopped dates
>> 3/4 cup water
>> 1 tsp vanilla
>> 1/2 chopped pecans or walnuts (optional)
In a bowl, whisk all dry ingredients together. Melt shortening. Add to the shortening the eggs, vanilla ad 1 cup of the water. Add the wet mixture to the dry. Blend well using a spatula. If need be, slowly add the remaining water until you have a soft dough. Cover, and place in the fridge for one hour.
Meanwhile, in a saucepan, combine the dates, fruit, water, and vanilla. Cook and stir constantly until the mixture is thick. Remove from stove, stir in the nuts and let cool completely.
Heat oven to 400 degrees F. Line baking sheets with parchment paper.
Remove the dough from the fridge. Place it onto either a large piece of parchment paper or onto a floured surface. Roll the dough as thin as possible or about 1/16 inch thick.
Cut the rolled dough into 3-inch circles (or 4 inch). Spoon some filling onto each circle leaving enough of an edge to seal it once you fold it over. Moisten the edges with water and using a fork, pinch the edges to seal. Place 1 inch apart on the baking sheets.
Bake until light brown, about 8 to 10 minutes.
