>> 1 (8 oz) can tomato sauce
>> 2 large garlic cloves, cut into small pieces
>> Salt and pepper to taste
Cut the cattail hearts into thin slices.
In a medium saucepan, combine the cattails, zucchini, tomatoes, tomato sauce, and garlic, sugar, salt, and pepper. Place the pan over high heat and bring to a boil.
Reduce the heat to low, cover the pan, and simmer, stirring occasionally, until the vegetables are tender (about 30 minutes).
Remove the cover and cook until the mixture is slightly thicker, about 10 minutes more. If you desire the stew to be a bit thicker, add arrowroot flour until desired thickness is achieved.
Taste and adjust seasonings, then serve.
