
>> 2 cups flour (preferably whole wheat)
>> 1 cup wild green flour (see notes)
>> 2 tsps. salt
>> 1 cup water(approximately)
Preheat the oven to 300 degrees F.
Mix the flour, wild green flour, and salt in a bowl. Slowly add water and mix using your hands. Continue to trickle in extra water until the dough sticks together without sticking to your hands. Knead the dough for 10 to 15 minutes so that it has a bread, dough-like consistency.
Place dough onto a parchment paper covered surface and using a rolling pin, roll the dough until it is about 1/4" thick. Using a small cookie cutter, cut out the dough and place on a parchment paper covered baking sheet. Alternatively, roll the dough out to 1/4" thick and cut into 1.5" squares.
Once laid out on the baking sheet, press a pattern of holes into each piece using a fork. Do not punch right through the dough. Turn each piece over and do the same thing to the other side.
Bake for minimum 3 hours. More baking time may be needed if your hardtack is not hard. If they are not really hard, keep in the oven and be sure to check about every 15 minutes. Do not go beyond 4 hours of bake time for this size of hardtack.
Note: Wild green flour is a combination of any edible wild greens (as well kale, swiss chard, etc.) that has been dehydrated and processed into a flour or powder. An example of this is our Green Smoothie Mix.
