
>> 1 egg
>> 1⁄2 cup maple syrup
>> 1 tsp fresh squeezed lemon juice
>> 3⁄4 tsp vanilla
>> 1⁄4 cup brown sugar
>> 1 tbsp flour
>> 3 tbsp melted butter
>> 1 cup aronia berries
>> 1/2 cup raisons
>> 12 (small) frozen tart shells (store bought)
Preheat oven to 375°F.
If using aronias gathered in winter, be sure to plump up the berries first by soaking them in water 10 minutes. Plump up the raisons as well.
In large bowl, whisk the egg, maple syrup, lemon juice, butter and vanilla. Whisk in the sugar and flour.
Strain the fruit. Mix the aronias and raisons together and add to the mixture.
Spoon into the thawed tart shells.
Bake 20 minutes. Let thoroughly cool before serving!
