
>> 1 cup aronia pulp (or other fruit pulp)
>> 1 mashed banana
>> 2 large eggs
>> 1/4 cup olive oil
>> 1/2 cup unpasteurized honey
>> 1/2 cup yoghurt
>> 1/4 cup hot water
>> 1/4 cup (halved) aronia berries
>> 1/4 cup dark chocolate pieces (or more if desired)
>> 1 tsp vanilla extract
>> 2 cups all-purpose flour
>> 1/2 cup cocoa powder
>> 1 tsp baking soda
>> 1 tsp baking powder
>> 1 tsp ground cinnamon
>> 1/2 tsp salt
Preheat the oven to 350°F.
In a large mixing bowl, whisk together the aronia pulp, mashed banana, eggs, olive oil, honey, yoghurt and hot water until well combined.
In another bowl, place all the dry ingredients and whisk together. Gently fold the dry ingredients into the wet mixture until just combined and a batter forms. Do not overmix.
Fold in the halved aronia berries and dark chocolate pieces.
Spoon the batter into a prepared muffin tin.
Bake in the preheated oven for about 25 minutes, or until a toothpick inserted into the center of a muffin comes out fairly clean.
Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Store in an airtight container at room temperature for no more than 4 days.
