
>> For the fruit sauce:
>> 1/2 aronia berries
>> 1/4 cup elderberries
>> 1/4 cup finely chopped apples
>> 1 tbsp fresh squeezed lemon juice (not bottled)

>> 2 cups all purpose flour
>> 1 1/2 tbsp arrowroot powder
>> 1 1/2 tsp baking powder
>> 1/2 tsp salt
>> 1/2 cup unsalted butter, room temperature
>> 1 1/3 cup granulated sugar
>> 4 tbsp fresh squeezed lemon juice
>> 1.5 tbsp water
>> 1 large egg
Make the fruit sauce.(See note below.) In a medium pot over medium-low heat, combine the berries and lemon juice. Cook, stirring frequently, until the fruit slightly breaks down and the mixture somewhat thickens (about 5 to 8 minutes). Set aside to cool.
In a large bowl, combine the dry ingredients and whisk. Set aside.
Using an immersion blender, cream the butter and sugar until light and fluffy. Scoop 3 heaping tablespoons of the cooled fruit sauce out of the pot and using a spatula, mix it into the butter and sugar. (If you have extra sauce, put it in a glass jar and store in the fridge. You can use it to make muffins, or place on top of pancakes.)
To the wet mixture, add the water and, egg. Mix until just combined. Then stir into the dry ingredients. Mix until everything is well combined.
Cover the bowl with plastic wrap and chill in the refrigerator overnight.
After the chill time, preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
Scoop one heaping tablespoon of the chilled cookie dough and roll it into a ball. (The dough will be sticky.)
Place them on the baking sheet, 2" apart from one another. Place in the oven and bake for about 15 minutes, until the bottom of the cookies becomes slightly brown. Remove the cookies from the oven and let cool for 10 minutes on the baking sheet before transferring them to a wire rack to finish cooling.
(Important - If you have to wait until the first batch of cookies are baked and cooled, keep the dough chilled until you can form the second batch.)
