
>> 1/2 cup softened butter
>> 1/2 cup organic cane sugar
>> 2 eggs
>> 2 cups unbleached flour
>> 2 tsp baking powder
>> 1/2 tsp salt
>> 2 tbsp applesauce
>> 1/2 cup milk
>> 1/2 cup mashed berry mixture (see note below)
>> 2 cups Saskatoon, hascap and chopped strawberries
Preheat oven to 350 degrees F. Grease muffin cups and set aside.
Cream the butter and sugar together until fluffy. Add the eggs, one at a time. Set aside.
In a small bowl, place the applesauce and mashed berries. Mix well.
Combine dry ingredients. Add in the milk and berry mixture, blend well. Slowly add into the butter mixture, and ensure that all ingredients are thoroughly blended.
Stir in the fresh berries.
Fill muffin cups to about 2/3 full. Bake 20 to 25 minutes, or until thoroughly baked.
Let cool then enjoy!
