>> 1 cup coconut flour
>> 1 cup unbleached flour
>> 1 tbsp baking powder
>> 1/8 tsp salt
>> 1/4 cup organic cane sugar
>> 1/4 cup unpasteurized honey
>> 2 eggs
>> 1 cup milk
>> 6 tbsp olive oil (or melted butter)
>> 10 to 20 elderberry gummies, chopped into small pieces (see note below)
Preheat oven to 400 degrees F.
If you are using standard muffin tins, grease them. Or line them with muffin liners. (I used silicone muffin cups placed on a baking sheet for this recipe.)
In a large mixing bowl, whisk all dry ingredients (except the gummies). Make a well in the center. In a smaller bowl, whisk the eggs, milk, honey and oil (or butter) together until thoroughly blended.
Slowly add the wet ingredients into the dry. Stir gently with a silicone spatula until all ingredients are just combined. Stir in the chopped gummies.
Spoon mixture into the prepared muffin tins or silicone muffin cups (to just below the top).
Place in preheated oven 20 minutes or until golden brown.
Once removed from the oven, let them sit 5 to 10 minutes; then place muffins on a wire rack to cool.
These muffins can be served warm if desired.
Note: Depending on the size of the elderberry gummies you have, will depend on how many to use. Don't be afraid to use a fair bit, but not to over do it to the point it impedes in the muffin texture.
