
>> 1 cup haskap berries (fresh or frozen)
>> 2 tbsp water
>> 1 tbsp lemon juice
>> 2 1/2 tbsp gelatin
>> 1 dollop of honey
Place haskap berries, water, lemon juice and honey into a blender or food processor; blend until smooth.
Pour mixture into a small pot and heat on medium heat until warm. Sprinkle gelatin over the mixture and allow to bloom for a 4 or 5 minutes. Whisk until thoroughly combined.
Place mixture into silicone molds. Place in the fridge to set for a few hours.
Once properly set, remove from silicone molds and store in the fridge in an airtight container for up to one week.
Notes: You will need silicone molds.
You can use Saskatoon (serviceberries) but these create a thicker mixture and finished texture. If you use these berries, use 5 tbsp water, not 2 tbsp.
