
>> 1/2 cup softened butter
>> 1/3 cup organic cane sugar
>> 1 large egg
>> 1 tsp baking powder
>> zest of half a lemon
>> 1/2 tsp vanilla
>> 1 3/4 cup unbleached flour
>> 1 cup mulberries (fresh or frozen)
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. If using frozen berries, thaw before using.
In a medium-size bowl place the first six ingredients. Whisk until well blended. Slowly add in the flour until everything is thoroughly mixed.
Using your hand, add the berries into the mixture. Slightly squeeze the berries until about half of them are crushed.
Form dough into golf ball sizes and place on the baking sheet leaving a one inch space between cookies. Slightly press down on each ball.
Bake 15 to 17 minutes until thoroughly baked.
Cool on a wire rack and enjoy!
