>> 2 cups unbleached flour
>> 1/8 cup sugar
>> 1 tsp baking soda
>> 1/2 tsp salt
>> 1 cup fresh mulberries (or mixed berries)
>> 2 small (ripe) bananas
>> ½ cup mashed pineapple
>> ½ cup olive oil
>> 2 eggs
>> 2 tsp vanilla
Preheat oven to 350 degrees F.
In one bowl place all the dry ingredients and whisk together.
In another bowl, place the bananas and mash. Add all other ingredients except the mulberries, and ensure they are mixed very well.
Using a spatula, add the wet mixture into the dry; mix until thoroughly blended. Carefully stir in the mulberries.
Grease and flour a loaf pan. Pour the mixture in and place in the oven.
Bake for 55 minutes or until the center is properly baked.
Let cool then serve.
Tips:
Buy pineapples when they are on the reduced rack! Remove the fruit from the rind and place in a blender. Blend it, then place the pineapple in a container and store in the fridge for up to 5 days. Any used pineapple, add to water and enjoy as a refreshing beverage!
No mulberries? No worries – swap out mulberries with any available fresh (or thawed) berries (i.e. Saskatoons, blueberries, aronias, etc.).
