>> 5 cups chopped pigweed leaves
>> 2 cups dry stuffing mix (see note below)
>> 5 garlic cloves, finely chopped
>> 1/2 cup Parmesan cheese
>> 5 large eggs
>> 1/3 cup softened butter
>> salt and pepper to taste
Preheat oven to 350 degrees F.
Sauté pigweed and garlic in oil of choice. Let cool.
Once cool, combine all ingredients. Place in the fridge for 2 hours.
After 2 hours, roll the mixture into 1" balls and place on a parchment paper covered cookie sheet.
Bake 15 to 20 minutes, until golden brown.
