
>> 1/2 cup sea buckthorn berries
>> 3 cups finely, chopped dates
>> 1 cup oat flour (see notes)
>> 1 tbsp oil
>> 1/3 cup broken bits of dark chocolate (see notes)
>> unsweetened shredded coconut
Place the dates in cold water and soak for 15 minutes. Strain, then let dry for 5 minutes on paper towels.
Put the dates into a bowl. Add the berries. Slowly add the oat flour. Use your (washed) hands to mix well. Form into 1" diameter balls and put them on a dish. Place the dish in the freezer for 15 minutes.
Meanwhile, in a bain marie, place the oil and chocolate. Over low heat, melt the chocolate.
Place a large piece of parchment paper on the counter. Using tongs, one-by-one, dip the cold balls into the melted chocolate then place on the parchment paper.
Before the chocolate hardens, top with a sea buckthorn berry and sprinkle with shredded coconut.
Once the chocolate has hardened a little, place them in the fridge to set.
