
>> 1/4 cup unsalted butter, softened
>> 2 tbsp sea buckthorn juice (see notes below)
>> 1 tbsp fresh squeezed lemon juice
>> 1 1/2 cups confectioners' sugar
Combine butter, sea buckthorn juice, and lemon juice in a small mixing bowl. Beat until thoroughly combined.
Slowly add the confectioners' sugar and keep beating until light and fluffy. Add more confectioners' sugar or sea buckthorn juice to adjust the consistency as needed.
Use on Sea Buckthorn Apple Cake or on anything else you desire.
Notes: To make the sea buckthorn juice, you will need 1/4 cup sea buckthorn berries and 1/8 cup of water. Place both ingredients in a small pot. Heat to just before boiling and remove from heat. Smash the berries and let sit until cool. Once cooled, strain so that you have pure juice (no seeds or skin).
