
>> 1 cup sea buckthorn apple sauce (see note below)
>> 1 cup water
>> 2 cups spelt or unbleached flour
>> 1 cups coconut flour
>> 1/3 cup organic cane sugar
>> 2 tsp salt
>> 2 tsp baking soda
>> 2 tsp baking powder
>> 1/2 tsp cinnamon
>> 1/2 cup chopped walnuts (optional)
>> 1/3 cup sea buckthorn berries
Preheat the oven to 350 F. Grease and flour an 8" X 8" baking pan.
Whisk all dry ingredients. Add the fruit sauce and water, mix until everything is well blended.
Stir in the walnuts and sea buckthorn berries.
Smooth into the prepared baking pan.
Bake 30 minutes in the center of the oven. Be sure to check the cake with a toothpick to ensure it is cooked thoroughly.
Let cool before removing from the pan and frost if desired.
